The Swan’s Olivier to guest chef at The Luttrell Arms

A LEADING Devon chef will be joining the Head Chef at a hotel in the area this month (April, 2019) for one night only to produce a four-course menu.

Olivier Certain, who is a chef at The Swan in Bampton will be cooking alongside Barrie Tucker at The Luttrell Arms Hotel in Dunster on Thursday, April 25 from 7pm. 

He said: “I am really looking forward to joining Barrie and bringing our expertise together to create a delicious menu that we hope people will really enjoy.” 

Olivier and Barrie will be cooking a four-course menu for the evening that will be served in the hotel’s two AA rosette Psalter’s Restaurant.

Tables for the evening will cost £35 per person and are bookable by calling 01643 821555. 

Barrie Tucker, Head Chef at The Luttrell Arms’ Psalter’s Restaurant, said, “It is always a pleasure to work with Olivier. We have created a stunning four course feast, which makes the most of food locally produced here on Exmoor.” 

The Luttrell Arms is situated in the heart of Dunster, one of England’s medieval villages, set within Exmoor National Park. 

The three AA starred hotel has 29 guest rooms, some with private terraces and garden access. It also has five traditional bars with open fireplaces, a Secret Garden with spectacular views of Dunster Castle and new The Mews Beauty Rooms, which open this spring. 

There is also an on-site two AA rosette Psalter’s restaurant and the venue hosts wedding receptions and live music festivals. 

Winner of Inn of the Year with the Good Pub Guide in 2015, The Luttrell Arms Hotel won Gold in the Bristol, Bath and Somerset Tourism Awards for Best Small Hotel and Best Pub, and were Grand Finalists in the coveted Trencherman‘s Awards for Best Dine and Stay in 2017 and 2018. 

  

Barrie trained with Phil Vickery and Richard Guest at The Castle Hotel in Taunton, and with the legendary Nico Landenis of the three Michelin starred Chez Nico in London. 

After heading back to his native Somerset, Barrie joined The Luttrell Arms and led his team to culinary excellence, achieving 2 AA Rosettes in just over two years. Barrie champions produce from the area in all his freshly cooked menus and created the now famous ‘Porlock Pie’ using Porlock Bay Oysters and Exmoor Venison and Ale. 

The Swan is an AA Four Star Gold Inn and the oldest pub in Bampton, Devon. It was named as one of the top 50 gastropubs in the country for the third year running in 2019, coming in at number 20. It received a special award as the highest climber in the list in 2018 when it was rated 28th and in 2017 it was positioned just inside the chart at 50. 

It has scooped a plethora of awards for its food including being named Gold Tourism Pub of the Year 2018 at the South West Tourism Excellence Awards, voted Best Dining Pub for 2018 in the Trencherman Awards and receiving a Gold Tourism Pub award in the 2017 Devon Tourism Awards. It also has two AA Rosettes for Culinary Excellence. 

Marseille-born Olivier moved to Somerset in 1998 following his Michelin star training in La Bonne Etape Chateau Arnoux and Les Roches in Le Lavandou. His first job in the area was with Andrew Dixon at Porlock Weir where he was second chef. 

In 2006, he joined Woods in Dulverton as head chef where he achieved two rosettes and the accolade of Somerset Dining Pub of the Year 2008, 2010 and 2011. In 2009, he reached the finals of the South West Chef of the Year competition. 

In 2017, he was crowned Somerset Life’s Best Chef at the magazine’s annual Food and Drinks Award and he was also a finalist in the 2018 Trencherman’s Award, and was in great culinary company. His fellow finalists included Michael Caines, Josh Eggleton and Nathan Outlaw, who all have Michelin stars.

Olivier will be cooking alongside Barrie Tucker at The Luttrell Arms Hotel in Dunster on Thursday, April 25 from 7pm.
