Kohl Rabi Cashew Coleslaw

Ingredients
250g kohl rabi, thinly shredded (if not available use pointed cabbage)
3 celery sticks, thinly sliced
3 apples, cored and thinly sliced
4 spring onions or 1 bunched onion, sliced
75g cashew nuts, toasted
2 tbsps parsley, chopped
150ml mayonnaise
2 tbsps natural yoghurt
squeeze of lemon juice
salt and white pepper to season
Instructions
Mix the kohl rabi, celery, apples, onions, cashews and parsley in a bowl. Stir the mayonnaise, yoghurt and a squeeze of lemon juice together, pour over the salad with some salt and pepper to season and mix together. Great for a barbecue.
