Easy Access

Grilled Leg of Lamb

Preparation Time: Overnight
Cooking Time: 15 mins
Serves: 12
Ingredients

leg of lamb or lamb leg steak

for the marinade:
6 cloves garlic, peeled & crushed
2 tbsp chopped rosemary
good pinch of ground black-pepper
3 tbsp lemon juice
4 tbsp olive oil

 
Instructions
  1. Skin, bone and butterfly the leg of lamb.
  2. Place the lamb in the marinade and leave overnight at room temperature, turning occasionally.

  3. Preheat a griddle or frying pan and seal lamb for 2 minutes on either side.

  4. Transfer the lamb to a roasting tray and finish off in the oven for a few minutes depending on how pink you like your lamb.

  5. Delicious served with a salsa rossa, made of a basic tomato sauce, mixed with chopped and peeled red peppers, chopped capers, mint, balsamic vinegar and olive oil.
