Braised Mushrooms with Buttered Linguine

Serves: 2
Ingredients

700g mushrooms
3 tbsp olive oil
3 cloves garlic, crushed
1 tbsp fresh thyme leaves
250ml white wine
250g fresh angel hair pasta or dried linguine
2 tbsp butter
2 tbsp flat leaf (Italian) parsley, finely chopped
4 tbsp parmesan, finely grated
salt and pepper

Instructions

  1. Cut the mushrooms into halves or quarters. Heat the oil in a large saucepan over a medium heat and add the garlic, mushrooms and thyme. Toss the mushrooms in the pan and cook until the garlic begins to soften. Add the white wine and season with sea salt. Cover with a lid and simmer for 7 mins.
  2. Add pasta to boiling salted water and cook until al dente. Drain pasta and return it to the saucepan. Stir the butter and parsley through the pasta, then pile onto warmed plates.
  3. Make a well in the centre of the pasta and fill with the mushrooms. Drizzle with the mushroom cooking liquid and season with black pepper. Serve sprinkled with parmesan.
