Chef John to cook for charity tasting dinner

AWARD-WINNING chef John Bradley from Dunkery Beacon Country House Hotel is joining forces with five other Somerset chefs to cook for a charity tasting dinner next month November (2019).

John will cook the dessert course during the tasting dinner on November 19 from 7pm at Knowle Manor in Dunster in aid of mental health charity, Mind in Somerset.

He said: “I am thrilled to be a part of the ‘Chefs for Hope’ team, which includes James Mason, former Head Chef at Kentisbury Grange in Devon, Ellis Pannell, Chef Patron of the Pyne Arms in North Devon, Paul Berry and Olivier Certain from The Swan in Bampton, Devon and Liam Finnegan, Head Chef at The Castle in Taunton. We’ll also be supported by the learners of Foxes Academy.

“The tasting dinner will include six courses and I will be whipping up the dessert for the occasion, which will be a blackberry mousse with caramelised Bramley jelly, streusel, apple crisp and crème Chantilly. Tickets will cost £85 per person and includes auction of promises will take place after the dinner. An optional wine flight is available for £25 per person.

“As a group we’re hoping to raise £5,000 to help set up a youth service in Minehead to help children with mental health issues in the area. We hope lots of people book their tickets as they will be able to enjoy some absolutely fantastic food and help an extremely worthwhile cause.”

Chefs for Hope was set up by Mike Griffiths, Head Chef at the Farmers Arms in Combe Florey and Elke Winzer, organiser of the Exmoor Food Fest. The objective of Chefs for Hope is to help charities raise much needed funds.

Elke said: “We are delighted that six fantastic chefs are joining us for our first tasting dinner in November. We are grateful to all of them for giving up their time to help us raise money for Mind in Somerset.”

The £5,000 the event is aiming to raise will allow 35 children with mental health issues to receive one on one support for a year.

Mike Griffiths added: “Many chefs struggle with mental health and supporting young people is a matter close to our hearts. We do hope we will exceed our target of £5,000 to be able to fund more than one youth group.”

John has more than 27 years’ experience in catering, notching up numerous top chef roles in this country and overseas.

He runs Dunkery Beacon Country House Hotel with his wife, Jane, who also has a background in hospitality and worked in the wine industry for more than 15 years.

John added: “We pride ourselves on offering luxury accommodation for those wishing to escape the humdrum of day-to-day life and to unwind in a truly tranquil location with stunning scenery all around.

“Our award-winning Coleridge Restaurant offers relaxed yet classic dining with a seasonally changing, à la carte menu and a focus on locally-sourced produce and our wine list is supplied by top London merchants, Berry Bros. & Rudd and Christopher Piper Wines in Ottery St Mary, Devon. We’re the only establishment in the area to offer such a sophisticated selection of wines to diners.

“We use as much local, seasonal produce as possible including Exmoor honey, eggs, pork and even offers Exmoor roasted coffee and blended tea.

“Also on the menu is sea bass, bream, trout, cod and scallops from the nearby Devon coast –Exmoor straddles both Somerset and Devon.”

The Chefs for Hope charity tasting dinner will take place on Tuesday, November 19 from 7pm at Knowle Manor in Dunster. Tickets cost £85 per person and are available from www.chefsforhope.org.
