Elderberries are in abundance right now, try the bushes just off the car park at Portchester Castle or just inside Nelson Lane on Portsdown Hill.
Elderberry Linseed Muffins recipe. I use USA cups because it's easy to remember the 3 cups flour/2eggs/1 cup milk/3/4 cup honey /1cup berries combo. 3-2-1 flour/eggs/milk, see? :-)
1 cup wholewheat flour
2 cups white flour
A handful of ground linseed with sesame and blueberries from Aldi
2 tsp baking powder
1 tsp bicarbonate of soda
1/2 tsp salt
2 beaten eggs, large
4 tbsp sunflower oil
2/3 cup honey
1 cup whole milk
Zest of a small lemon
1 cup fresh de-stalked elderberries (I used a fork)
really easy actually. Put everything in a bowl except the elderberries, mix with a hand mixer and when it is all
incorporated well, stir in the elderberries. Put into muffin cases in a muffin tin.
It makes about 12.
Cook at 200 degrees for about 20 minutes. Check with a cocktail stick and if it comes out clean, they are done.
Lime icing is just lime juice and icing sugar.
