Carrot & Ginger Salad With Japanese Dressing

Serves: 4 people
Ingredients
- 4 large carrots, peeled + coarsely grated or julienned using a food processor/ mandolin
- 1 small bunch chives, snipped into 1cm lengths, or green part of 2 spring onions, finely sliced
- 3 tbsp sesame seeds, toasted
for the dressing:
- approx 4cm fresh ginger, finely grated (you need 4 tsp)
- 4 tbsp sunflower or rapeseed oil
- 6 tbsp rice vinegar
- 3 tbsp light soy sauce
- 3 tsp caster sugar
Instructions
- Combine all the dressing ingredients in a large bowl and stir well to mix together.
- Add the grated carrots, then add most of the chives or spring onions and most of the sesame seeds. Turn onto a serving dish and garnish with remaining chives and sesame seeds.
