Carrot & Ginger Salad With Japanese Dressing

Preparation Time: 15 minutes
Cooking Time: 0 minutes

Serves: 4 people

Ingredients
 
  • 4 large carrots, peeled + coarsely grated or julienned using a food processor/ mandolin
  • 1 small bunch chives, snipped into 1cm lengths, or green part of 2 spring onions, finely sliced
  • 3 tbsp sesame seeds, toasted

for the dressing:

  • approx 4cm fresh ginger, finely grated (you need 4 tsp)
  • 4 tbsp sunflower or rapeseed oil
  • 6 tbsp rice vinegar
  • 3 tbsp light soy sauce
  • 3 tsp caster sugar

Instructions
  1. Combine all the dressing ingredients in a large bowl and stir well to mix together.
  2. Add the grated carrots, then add most of the chives or spring onions and most of the sesame seeds. Turn onto a serving dish and garnish with remaining chives and sesame seeds.
