Asian Coleslaw

Ingredients
1/2 cabbage
3 carrots
2 apples
1 red pepper
4 or 5 mushrooms
1 tomato
2 tbsp roasted peanuts
1 clove of garlic
1/2 onion
1 chilli
3 tsp fish sauce
1 1/2 tbsp brown sugar
3 tbsp lemon juice
dash sweet chilli sauce
Instructions
- Finely shred the cabbage, grate the apples and carrot, slice the peppers and mushrooms and chop the tomato. Crush the roasted peanuts.
- Finely chop the onion and chilli and crush the garlic clove. Add these ingredients to a bowl along with the fish sauce, brown sugar, lemon juice and sweet chilli sauce. Whisk the dressing ingredients together in the bowl and set to one side.
- Add the raw vegetables to the bowl with the dressing and toss until all the vegetables are evenly coated.
- Pile the contents of the bowl onto a serving plate and sprinkle with roasted peanuts.
