Griddled Leeks

Serves: 4
Ingredients
4 whole leeks, trimmed
3tbsp olive oil
juice of 2 lemons
1tbsp sugar
100ml water
large handful of chopped coriander/parsley
Instructions
- Blanch the trimmed leeks in boiling water for 2 minutes, then drain and refresh in cold water. Cut the leeks in half lengthways if large.
- Drain the leeks once more, brush lightly with oil and sear on a hot griddle pan.
- In a large pan, gently heat the lemon juice, sugar and water.
- As the leeks come off the griddle, place them in the warm marinade. Leave for 5 minutes.
- Sprinkle the finely chopped coriander or parsley over the top of the leeks and serve with grilled fish or roast meat.
