Spinach Soup

Cooking Time: 15 minutes
Serves: 2-3 people
Ingredients
500g spinach, washed
a knob of butter
2 shallots or half a small onion
2 small garlic cloves
500ml hot stock
150-200ml crème fraîche or cream
nutmeg
Instruction
- Finely chop the onion or shallot and garlic.
- Melt the butter in a heavy-based saucepan, then add the onion, garlic and a pinch of salt.
- Sweat for 5-10 mins – it should be soft and translucent but not colouring.
- Add the spinach, cook for a couple of mins until it has wilted, then add the hot stock.
- Purée, then return to the pan and warm gently, stirring in the crème fraîche or cream.
- Taste, then season and grate in some nutmeg, tasting as you go.
- Make sure that the soup doesn’t come to the boil.
