Spinach Soup

Preparation Time: 5 minutes

Cooking Time: 15 minutes

Serves: 2-3 people

Ingredients

• 500g spinach, washed

• a knob of butter

• 2 shallots or half a small onion

• 2 small garlic cloves 

• 500ml hot stock

• 150-200ml crème fraîche or cream

• nutmeg

Instruction

1. Finely chop the onion or shallot and garlic.
2. Melt the butter in a heavy-based saucepan, then add the onion, garlic and a pinch of salt.
3. Sweat for 5-10 mins – it should be soft and translucent but not colouring.
4. Add the spinach, cook for a couple of mins until it has wilted, then add the hot stock.
5. Purée, then return to the pan and warm gently, stirring in the crème fraîche or cream.
6. Taste, then season and grate in some nutmeg, tasting as you go.
7. Make sure that the soup doesn’t come to the boil.
