Easy Access

Broccoli and Red Pepper Quiche

Cooking Time: 60 Mins
Serves: 6
Ingredients

300g plain flour
125g butter
pinch salt
a dash of water
500g broccoli florets
2 medium onions sliced
1 large red pepper
2 tbsp sunflower oil
6 eggs
350ml milk
150g cheddar cheese
1 tbsp dried mixed herbs
2 tsp dijon mustard

 

Instructions

Rub the butter into the flour and salt then bind together with a little water to form the dough. Oil a flan tin then press the rolled out pastry over the tin. Trim the edges, gently push a lining of tin foil into the flan and pre-bake for 15-20 mins at 150ºc.

Fry the onions and pepper then blanch the broccoli florets. Whisk together the milk, eggs and mustard.

Spoon the vegetables into the pastry case and sprinkle with salt, pepper, herbs and cheese. Pour the whisked mixture over the vegetables and bake for 40 mins at 180ºc.
